VEGETABLE SALAD

This is a healthy salad with a lot of vegetables and nuts. Goes well with any main course. Great during summer time, A bowl of this once or twice a week will give you a satisfied feeling that i have taken something healthy. Try it by adding some dry fruits also.

Materials

  • 1 tomato finely chopped
  • 1 Bell pepper (Capsicum) finely chopped
  • 1 Cucumber finely chopped
  • 1/4 Beetroot finely grated
  • 1 carrot finely grated or chopped as per taste
  • 1 inch Ginger finely chopped
  • Coriander leaves finely chopped
  • Pudina finely chopped
  • 100 grams Ground nuts boiled
  • 1 Cup Pomegranate seeds
  • Salt to taste
  • 1/2 tsp Pepper powder
  • 1/2 tsp Jeera powder
  • 1/4 tsp Chilli powder
  • 1/2 tsp amchoor (dried mango powder)
  • 1/2 tsp Sugar
  • 1 tbsp Lemon juice

Instructions

  • Take a bowl and add the tomato, capsicum and cucumber

  • Now add the beetroot and carrot

  • Add the ginger

  • Now add the coriander leaves

  • Add the pudina leaves

  • Now add the boiled ground nuts

  • Add the salt as per taste

  • Now add the pepper powder, jeera powder, chilli powder,amchoor and sugar

  • Now add the pomegranate seeds

  • Finally add the lemon juice and mix everything thoroughly. Your vegetable salad is ready to be served

Notes

You can even add other  vegetables like chow chow, broccoli, boiles sweet corn, soaked and boiled chick peas, roasted sesame seeds, roasted flax seeds, raw mango. Increase or decrease the spices according to the vegetables  added.
