Veggies in piri piri sauce with herb rice. The name sounds too long right ? But trust me, these two dishes are very very easy to make. I was intent on making herb rice for dinner, and I wanted something simple and quick to go along with it. I found this combination on Your Food Lab in YouTube. And I was immediately very excited about how great this looked. Now naturally, my first thoughts were but I don’t have the piri-piri mix at home. But turns out we don’t need it, and it can be prepared using simple powders we have at home.

I already have a recipe for herb rice up on the website. And while they are essentially the same, I have given another recipe here too. I used onion powder, paprika and curry powder additionally. I have linked up the recipe for making curry powder in my Pineapple Rice Recipe earlier. But if you don’t have any of those, feel free to skip it. I used my Wonderchef Dutch Oven to make this rice, it’s very versatile and I can also prepare the rice in the oven if I want to.

To make the veggies in piri piri sauce with herb rice, I used the vegetables that I had available in hand. If you have broccoli, mushrooms, coloured bell peppers, you can add them too, and it’ll be a delightful addition the sauce. You can also skip the paneer if you wish to cut down on diary in your dish.

For veggies in piri-piri sauce

    For piri-piri mix

    • 1 tbsp Red Chilli Powder
    • 1 tsp Garlic Powder
    • 1 tsp Black Salt
    • 1 tsp Sugar
    • 1 tsp Dried Oregano
    • 1 tsp Dried Ginger Powder
    • 1/2 tsp Cinnamon Powder

    For the sauce

    • 1 tbsp Instant Oats
    • 2 tbsp Oil
    • 8-10 cloves Garlic Chopped or minced
    • 1 Onion Small, chopped finely
    • 1 1/2 cups Milk
    • 1 Carrot Diced
    • 1 Capsicum Diced
    • 1/2 cup Corn
    • 100 gms Paneer Diced
    • Salt To taste
    • Parsley Fresh or dried, for garnishing

    For the herb rice

    • 2 cups Long Grain White Rice
    • 4 cups Water
    • 1 tbsp Butter
    • 2 tbsp Oil
    • 1 tsp Parsley
    • 1 tsp Oregano
    • 1 tsp Onion Powder Optional
    • 1 tsp Paprika Optional
    • 1 tsp Curry Powder See notes, optional
    • Salt To taste


    For the herb rice

    • Take 2 cups of rice and wash it under running water. Set it aside to drain.
    • In a kadai, heat oil and butter.
    • To this add the optional spice powders (if using). Skip this step if not using, and go directly to sauteing the rice.
    • Add the rice, and saute in the butter-oil mix for 2 minutes. This will lend the rice a very good flavour.
    • Add the given amount of water, and season with salt and parsley and oregano.

    • Let the water come to a boil, then simmer and let it cook for 15-17 minutes. Garnish with more parsley before serving.

    For the Veggies in Piri Piri Sauce

    • Mix all the ingredients given for the piri-piri mix, and keep it aside.
    • Grind the instant oats to a fine powder, and keep it aside.
    • In a kadai, heat oil.
    • Add onions, and saute till the onions turn translucent.
    • Add garlic, and saute till they turn a little brown.
    • Add the ground oats powder, and mix it well without any lumps. Saute until the raw smell of oats disappears. This will take around 2 minutes at the most.
    • Add milk gradually while stirring continuously to avoid the formation of lumps. Cook until the mixture starts to slightly thicken. This should take 2-3 minutes.
    • Add the mixed piri-piri mix fully, and season with desired amount of salt. Mix well, and cook for another 1-2 minutes. At this point, the mixture should coat the back of a spoon as a nice layer.
    • Add the cut vegetables, and cook for a good 5-7 minutes (or until the vegetables are cooked to your desired level; some like to have them a bit crunchy while others might want very soft vegetables).
    • Add the cut paneer, mix well and cook for 1 minute before switching off the stove.
    • Garnish with parsley before serving.
