Rava Kesari

- 1 Cup Rava (Semolina)
- 1 Cup Ghee
- 2 1/2 Cups Sugar
- Few Cashewnuts
- Raisins (Optional)
- 3 Numbers Cardamom crushed or cardamom powder
- 1/4 tsp Food color (lime yellow or light orange)
Heat three cups of water and let it boil
Take a kadai and heat two tbsp ghee
Fry the cashew nuts till it is roasted drain and keep it aside
Add two more tbsp of ghee and start roasting the rava
Add water little by little and keep on stirring. Be careful that no lumps are formed
Keep on stirring the rava till it gets cooked
Now add the sugar and keep on stirring till the sugar gets dissolved
Now add the food color
Add the crushed cardamom
Now add the roasted cashews
Pour the remaining ghee over it and keep on stirring until the mixture reaches a semi solid consistency. Don't wait for it to become too hard as the kesari will solidify as it cools.
Now the kesari is ready to be served. Enjoy the hot rava kesari
I have used light yellow food color as my daughter likes this color. You can use even light orange color if you want.
If you want to add raisins fry the same along with cashews and add to the kesari mixture at the time of adding the cashews.
If you feel the sweetness will be on the higher side you can reduce the sugar to two cups
